    I've lived in Germany for 30 years and have studied twice: in Syria I studied to become a teacher of physics and chemistry and in Germany I studied informatics. To finance my life here, I worked in the gastronomy sector. On my very first day, I worked in my brother's restaurant. I co-founded Palmyra in Bremen in 2000 and have been running it alone for 12 years.

    To explain our situation, I would like to give you a brief introduction to Syrian, or more precisely Levantine, cuisine. The story takes us to Syria, which is known as the cradle of civilisation. At that time, there was talk of social innovations such as sedentarisation and urban development. Advances in technology and culture, trade and change were driven forward here. As a ‘transit country’, Syria absorbed all the developments of its neighbours, reshaped them, refined them and passed them on.

    Levantine cuisine, especially Syrian cuisine, has a deep-rooted history that goes back thousands of years. It is an example of the diversity and richness of a region that serves as a melting pot for different cultures, flavours and cooking traditions. Due to its geographical location, Syria has always been a central point of trade and cultural exchange, resulting in a unique fusion of flavours and techniques that makes this cuisine so special.

    Spices and ingredients from India, China and Iran, which travelled to Syria via the Silk Road, were refined in Syrian cuisine and then found their way to Europe, particularly Turkey, Greece, Sicily and Andalusia. This history of culinary exchange and innovation is still reflected in Syrian dishes today, which combine a variety of flavours, colours and textures.

    Our aim is to pass on this tradition and hospitality with a modern flair at Levante im Schnoor. We offer our guests not only a culinary experience, but also a glimpse into a rich and deeply rooted culture. The combination of perfect service and a good working atmosphere certainly sets the restaurant apart.

    Levante should be a place where people not only come to eat, but also to experience the history and traditions of Syria and the Levant (‘Al-Sham’ in Arabic). I want Levante in Schnoor to be a melting pot of my tradition and your experiences. We want to bring not only my heart and soul to the Schnoor, but also your hearts and souls. That is my goal, and I hope it will be your goal too. I hope that I have awakened something special in you and given you new strength to break new ground.
